Jan Yarbrough hopes her best advertising will be the smell of freshly baked bread and cookies wafting into the street.

"Hopefully, the good smells will just suck people in," she chuckled.

Yarbrough plans to open her new Flour Smudge Bakery and Deli in the Wolcott Galleria next month. The address is 136 S. Wolcott, suite 107A, in downtown Casper.

The shop will include a wide variety of bakery goods, including yeast breads, sourdough bread, biscotti, specialty breads like herb Parmesan and jalapeno cheddar, along with cookies, cheesecakes and bread bowls.

While the shop will focus on baked goods, it will also include a deli with homemade soups and made-to-order sandwiches for lunch. "You tell me want you want and we'll make it the way you like it," she said.

Yarbrough has baked for craft fairs, farmers markets and the cafe at Hilltop Bingo, but this is her first attempt at a storefront bakery. It will mean saying farewell to her longtime job managing a coal testing lab. "I'm very excited," she said. "I'm a little scared."

But baking is her passion. So when an opportunity arose to open a shop in the Wolcott Galleria, she jumped at the chance.

Yarbrough is in the processing of working out final details with the health department and ordering equipment for her shop. She said the 700-square-foot space can seat about 40 people, with additional seating near the entrance. A friend also wants to open a coffee kiosk for the store.

Hours will be weekdays from 7 a.m. until 6 p.m., and probably until 2 p.m. on Saturday. Yarbrough said she will have breakfast pastries, lunch, and desserts and other baked goods for dinner. They will also deliver within walking distance downtown.

When the Wolcott Galleria opened, the management team envisioned a group of complementary businesses that would, in part, support activities in the renovated, second-floor spaces of what formerly was the Odd Fellow Building.

Included are businesses like a flower shop, wedding designers, a beauty salon, and coming soon, the Flour Smudge Bakery and Deli.
