Your blood pressure, blood glucose level, waistline and cholesterol levels are important numbers to know for overall health. But those aren’t the only indicators of better health. What you put on your fork, how you use your feet, who you connect with, and how you feed your soul are keystones to better living. When we feel happier, we’re healthier. Connecting with others, being kind, laughing, feeling awe, telling people what you appreciate about them, noticing sunsets are all soul food moments. There is no number to reach, in fact, the more the better.

Getting outside is a mood booster. Outdoor walking, running and cycling, going to the park, and hanging out in your own yard reduces stress, anxiety and depression, more, it feeds your soul and makes you happier. Yet, according to a UCLA study, dual-income, middle-class families spend less than 15 minutes a week in their backyards doing leisure activities. I’ve got a solution. Fire up the grill.

Grilled quesadillas are a dinner winner in less than 30 minutes.

Mushrooms’ meaty texture makes them ideal in a quesadilla. Corn tortillas may not be what you usually see with quesadillas, but they provide crunchy texture and toasted corn flavor. Corn tortillas generally have more fiber and less salt than flour tortillas, plus the smaller size builds in portion control. Quesadillas need something to help them stick together. Mozzarella and blue cheese are the glue in this recipe. Top with fresh mango salsa like I did or use your favorite salsa.

And then, pull up a deck chair, pour a cold drink and let’s eat…outside, please.
