Make your mashed potatoes as you
normally would. Add the cream cheese, scallions, parsley, garlic,
red onion and half the ranch packet. Mix until well blended. Set
aside and let cool. While the potatoes are cooling, run the bread
crumbs and the rest of the powdered ranch mix through a food
processor or blender on pulse until fine.
Heat some oil in a frying pan over
medium heat until hot. Roll the mashed potatoes into a balls about
half the size of golf balls, then coat them with the bread crumb
mixture. Fry until golden brown.
